I am a huge food person. I love everything about it. So when it comes to making dinner for my family I love thinking up ideas of what to make based on what we have in the fridge, freezer and pantry. I am an avid follower of This Week For Dinner, but have never posted my meal plan or really even glanced at the comments of people who have to get dinner inspiration from anyone other than Jane, the blog owner. The plan is to change that today, as well as post my dinner plans here every week.
Monday
* Leftover corned beef, cabbage and potatoes.
My Mom gave us some of the leftovers from Saturday's feast. She bought and made THREE corned beef and five pounds of potatoes since we were excepting quite a few more people to show up. Oh well! Their loss, my family's gain! We are happy to have the leftovers!
Tuesday
* Mushroom soup recipe (I will more than likely change most of the recipe. I'll use veggie instead of chicken brother, 2% milk instead of half and half. I'll add chopped celery and I will food process most of it.
This one is also because of my Mom :) God Bless that woman! Someone made a big error at the grocery store and labeled a HUGE bag of mushrooms as $3. Normally you would think there was something wrong with them, but nope they're good as gold. My Mom gave me so many of them I made mushroom risotto last night also, which turned out pretty good!

* Homemade pizzas and/or calzones
Saturday and Sunday are usually free for all's, we just eat whatever is around, go out or eat at my parents house.
I hope to take pictures of some of our meals (I actually do this a lot, my phone is full of food pictures) and post them this week.
